Im going to Mince pie mountain.....
Its that time of year again when I have to make mountains of mince pies, shortbread, cheesy caraway sables...... I love it!! I made my first batch of crispy delicious mince pies today.... 4 and a half dozen to be precise! They will last about 3 days in my house, if I am lucky!
The kitchen table was scubbed nice and early ready for the onslought of flour and rolling pin...
Such old tins. None of my tins are shiny, but they can almost make mince pies, rock buns and tarts by themselves, theyve made so many in the past 20 years.
This is a standard sweet shortcrust pastry but look at all the feathery layers that have opened up as they have cooked..... crumbly crispy pastry heaven!
Go on, make a few trays and when they are cooked, fresh from the oven, make a nice pot of tea and find your favourite bone china cup and saucer.... set the tea tray, fill up the little milk jug and sit and go to mince pie heaven.
Must dash xxxx the kettles just boiled!

Wow, they look decidedly yummy! I'm with the few others here in asking for the recipe as well! There are so few mince pies being made in America..I think we are missing out on this tradition!
